Italian Pasta Recipe

2-3 servings

Prep time: 10 minutes

Cooking time: 2 ½ hours


  • 1 tablespoon olive oil

  • 2-3 cloves garlic, minced

  • 2 tablespoons oregano

  • 1 ½ large onions

  • 1 lb Italian sausage

  • 8 oz of pasta

  • 6 oz peeled tomatoes, smashed

  • ½ cup shredded mozzarella

  • ½ cup parmesan cheese

  • Fresh basil for garnish


  1. In a preheated solar cooker, heat salted water until boiling.

  2. Add pasta and boil for the time specified on the package.

  3. Save one cup of the boiled pasta water and drain the rest. Set aside the pasta.

  4. In a small saucepan, add sausage and olive oil, and cook until browned, stirring and mashing every few minutes.

  5. Add tomatoes, garlic, oregano, and onions. Stir until combined and let simmer for an hour.

  6. Add in the pasta, mozzarella, and half of the parmesan cheese. Stir to combine.

  7. Leave the pasta in the cooker for another 10 minutes to allow the cheese to melt.

  8. Garnish with basil and the remaining parmesan cheese.

  9. Enjoy!

Note: The cooking time may vary depending on the strength of your solar cooker. Adjust accordingly.

PRO TIP: Don't wait for your water to boil...Once the water is hot to the touch, just stir in your pasta, continue to heat in the solar cooker and remove from water when cooked. A few drops of olive oil in the water helps prevent clumping
